Tapioca starch
Tapioca starch is made from cassava root. It consists mostly of pure carbohydrates with little protein, fiber, and other nutrients. Recently, it has been a suitable (gluten-free) substitute for wheat and has become very popular. Cassava root is one of the main food ingredients in Asian, African, and South American countries. It is usually available in white flour, shell, and pearl forms. After soaking, it will become swollen, transparent, and almost double in size. It is used in gluten-free breads, desserts, soups, and baking.
