Carrageenan is a plant product obtained from red seaweed. This substance is used in order to create a suitable concentration and emulsion in foods and beverages. For this reason, manufacturers use it as a gelatin substitute in the food industry. Carrageenan can be considered a fat substitute in fat-free or low-fat foods. Carrageenan acts as a natural gelling agent in meat products and has the ability to form a gel with processed meat proteins. It also effectively increases water absorption and improves cutability in meat products.
